Creamy Garlic and 
Parmesan Rice

This creamy garlic and parmesan rice is absolutely delicious and warmed up our bellies last week! Our tamariki absolutely loved this one!

Ingredients

  •  500g chicken breasts, diced
  • 4 tsp oil
  • 1 tspn paprika
  • 1 large onion, diced
  • 1/2 cup broccoli (chopped into small pieces, broccoli rice would work well too)
  • 1/2 cup cauliflower (same as broccoli, cauliflower rice would work too if you wanted to save time)
  • 3 cloves garlic, minced
  • 1/2 cup vegetable stock
  • 1 cup coconut cream (heavy cream, whichever suits the dietary requirements)
  • 1/4 cup mild grated parmesan (they also have DF parmesan by Angel foods)
  • Cooked rice to serve with (Long grain or basmati would work well!)

Method

  • On a medium to high heat, lightly fry the onions until just browned.
  • Add the minced garlic and cook until fragrant.
  • Add the cubed chicken and fry until lightly golden on all sides.
  • Add both the cauliflower and broccoli, along with the paprika and cook for a further few minutes.
  • Add the vegetable stock and the cream of your choosing, bring to a light boil and then turn right down to a low heat and add the parmesan.
  • Let simmer for another 5 minutes.
  • Served with cooked rice!
