Ingredients
TOPPING
Grated cheese
Mince
Onions (Diced)
Minced Garlic
Mince 500g
1 cup mixed veggies
1 tin lentils
2 TBSP Vegetable stock powder (we use Vegeta at the centre)
1 tin Chunky pasta sauce
MASH
3 Large Potatoes, peeled and cubed
1 large Kumara, peeled and cubed
1 TBSP Olivani
Kara coconut cream until creamy and spreadable.
Salt and pepper
Method
Preheat oven to 200 degrees.
Peel and cube your potatoes and Kumara and boil until soft.
Sauté onions until slightly golden, add garlic and cook for a further minute.
Add your minced meat and break up as it’s cooking. When all your mince is just cooked, add your vegetable stock and a small amount of water to help distribute the stock.
Add your mixed veggies and lentils and cook for a further 5 minutes.
Add pasta sauce and allow to heat until it starts to just bubble. Remove from
heat and set aside.
Mash your Kumara and potatoes thoroughly.
Add olivani and a small amount of coconut cream to begin with and add more if necessary to be able to spread over mince.
Add your mince to an oven proof dish and spread out evenly. Top with mash again spreading evenly.
Finish off with a sprinkling of cheese and bake until golden.
